Butternut Squash & Jarlsberg Cheese Dip

Butternut Squash & Jarlsberg Cheese Dip


  • 1 Butternut Squash OR 1 package of pre sliced packaged Butternut Squash (found at Whole Foods or Trader Joes)
  • 1/2 Cup of Almond Milk
  • 1 Garlic Clove
  • Pinch of Salt + Pepper
  • 1/4 -1/2 Cup Ground Almonds
  • 1/2 Shaved Jarlsberg Cheese
  • Black Bean Chips to dip with (You can always use any other chip, pita, etc you'd like!)


If you use the whole squash you will need to roast it in the oven...

  • Preheat oven to 375.
  • Slice the squash in half.
  • Place the squash (insides up) on a baking sheet.
  • Roast for 25-45 minutes. 
  • The meat inside the squash will turn a darker color and will soften.

If you use the pre- cut sliced Butternut Squash...

  • Place the sliced the squash in a microwave safe bowl and cover it
  • Heat on high for 3-5 mins
  • The slices will turn a golden darker color and will be soften
  • Once you have the squash softened and cooked put it into a blender and mix for 30 seconds-1 min.
  • Add milk and blend again for 30 seconds
  • Pour blended squash into a bowl.
  • Mix in salt and pepper.
  • Mix in the garlic.
  • Top off with crushed almonds and shaved Jarlsberg cheese.
