Spinach & Beet Salad

Serves 4


  • 2 cups of Baby Spinach (About 2-3 bunches or 1 package)
  • 2-3 Tablespoons of Crumbled Feta Cheese (You can take this ingredient out if you are vegan!)
  • ½ Cup of Walnut Pieces
  • 3-4 Small Beets (boiled)
  • Balsamic Vinaigrette Dressing (Another option is using only EVOO & Balsamic Vinegar!)


  • Wash your spinach thoroughly.
  • If you’re going to boil your beets cut off the stems on top leaving about an inch of stem ( Be VERY careful boiling beets because if  you aren’t familiar with this root it will stain EVERYTHING!) You will want to boil them until they are soft and easy to cut through with a knife. About 8-15 minutes depending how big of a beet you have. Once they are done you will want to run cool water over them so they aren’t hot. Another option to skip this process is to buy pre packaged boiled beets, which will save you a lot of time in the prep of this salad!
  • Slice beets and put into bowl with spinach, feta(optional*) and walnuts.
  • Top with your dressing!
  • Enjoy!
