The Cleanest Salad

Happy Monday everyone!

Are you trying to eat clean and don’t know where to start or are you already following a “clean” diet but are getting bored and looking for new recipes?! Well, you’re in luck because today’s post is a recipe for what I call the “cleanest easiest salad.”  I call it that because that’s exactly what it is clean and easy! Not to mention it’s super tasty!

Let’s make this!

The Cleanest Salad

  • Spring Mix Leafy Greens & Spinach (If you have Kale you can definitely add that in there!)
  • Beets (About 2-3 or more if you are a beet lover!)
  • Cucumber
  • Avocado
  • Lemon
  • Sunflower seeds
  • Balsamic Vinegar & EVOO (Extra Virgin Olive Oil)

*NOTE* There are a few different ways you can prepare this salad. You can make it with all of these ingredients or if you are watching your fat intake you can use the EVOO or mash up the avocado and then massage it into your greens. This would then act as a dressing in itself! You can also squeeze the lemon into the salad as well or you can choose to not put it in at all! If you don’t like Balsamic and you do like lemon you can replace the vinegar with the lemon juice! Lots of options! :)

  • First, wash your greens. Then slice you beets into thin slices.
  • Cut your cucumber into thick slices. I like to cut the slices into quarters. Personal preference. You can cut your cucumbers however you’d like! ;)
  • Depending on what you have decided to do for your dressing you can add that. So you can do the balsamic and vinegar, avocado and lemon, or everything! All up to you! I usually do balsamic, lemon and avocado!
  • Top with sunflower seeds (you only need a small amount about a tablespoon or so) and enjoy! :)
